I made a big batch of this soup over the weekend to freeze. It's very yummy!
Organic Carrots and parsnips (peeled and chopped) - about equal portions of each.
Grated fresh ginger
Salt to taste
Saute the onions and ginger in a bit of olive oil for a few minutes. Add the carrots and parsnips. Add broth. ( I added about 4 cups). Cook until tender, puree. Yum!!!
